To assist post-9/11 combat veterans nationwide from all military services as well as selected civilian workers who served in combat zones with reintegration into a non-combat environment and transition into civilian life through continuing education and training centered on basic homesteading skills, animal husbandry, permaculture, and a Nutrition Through Culinary Arts program, all in support of the overall mental and physical improvement of participants.

| During 2016 Valhalla Project provided an outlet for veterans to participate in infrastructure maintenance and improvement activities on a 200 acre homestead for the benefit of themselves, their buddies, and future generations of combat veterans like themselves. Over the first five years of operations it has been discovered that many veterans arrive malnourished following years of fast food and poor eating habits based almost entirely on processed foods, and the symptoms of malnourishment in fact mirror those of post traumatic stress disorder. Many veteran participants who come to Valhalla have experienced significant improvement with symptoms previously thought to be PTSD related, yet only a few weeks on a nutrient dense natural foods program often results in marked reduction of symptoms such as anxiety, insomnia, chronic fatigue, headaches, irritability, and other PTSD-mimicking malnutrition problems. Efforts continued to expand the Valhalla Project's unique permaculture design for the grounds, pastures, forests, and wildlife habitats with post-9/11 veterans accelerating some key elements focused on long term environmental goals. The orchards showed aggressive growth, the free ranging poultry flocks (ducks, chickens, and turkeys) produced more than adequate numbers of fresh eggs, raised garden beds were improved and yields also grew as a result, providing best-quality organic food for participating veterans. Our plan to teach Valhalla participants more in depth about nutrition, overall health benefits of eating well, and preparation of delicious meals for themselves and families proved very productive and useful. We continue to instruct participants in healthy nutritional practices with emphasis placed on freshness of ingredients, variety of foods, and ease of preparation, imparting a sense of self-confidence and comfort to veteran participants who had little or no cooking experience. | $43,828 | - |
